I love the smooth look of fondant on cake and cookies but I don’t like the taste or feel. I recently wanted to try my hand at small cakes (petit fours) iced with a pourable fondant icing. I used a small muffin type pan to make the cakes. I am not an expert baker, but cakes tasted good even though I used a cake mix. For the pourable fondant icing I used the recipe below.
Recipe
6 cups sifted confectioners’ sugar (about 1 1/2 lbs.)
1/2 cup water
2 tablespoons light corn syrup
Place sugar in saucepan. Combine water and corn syrup; add to sugar and stir until well-mixed. Cook over low heat. Don’t allow temperature of mixture to exceed 100°F. Remove from heat; stir in extract and icing color.
There is no easy way to pour the fondant over the cakes or cookies. In my mind the small cakes were going to look more like traditional petit fours. They in fact did not look at all like I had imagined. I was so disappointed with how the cakes turned out that I pulled some frozen cookies that I had ready for another project. I stacked them to look like stacked layer cakes.
I was very pleased at how the cookies looked when stacked and the fondant was poured over them. These would be great for a shower, or as a wedding favor. They could be decorated in colors or just by adding some white piping.
I put the cookies on a rack which had a baking pan under it to catch the drips. I did not reuse the icing which dripped into the pan but you could easily.
These are the tiny iced cakes. They turned out to look somewhat like Easter eggs. Even though they did not look like the cakes that I had imagined, they tasted yummy. The pourable icing made the already moist cake seem even better. The icing had a slight crunchy feel when you bit into it which was quite nice.
I finished the cakes off with some purchased flower candies. They are not what was in my head but they are OK.
The cookie cakes are another matter. I love how they looked when they were finished . The clean sharp lines with fondant poured over them is a nice look. I had planned to just put one prebought flower on each one but when I saw how cute they were I decorated them with piped icing.
I did simple and easy designs that could be done quickly with little effort. After they had dried a couple of hours I put them on a cupcake liner.
I am going to try a more traditional petit four method ( where you make a large cake and cut it into small rectangles after it is baked) in the near future. I like the icing and will use it again on the cookies. If I had used a smaller decorating tip and took some time the cookies cakes could have been fantastic.
